Dr. Baez' research interests include the physiological and biochemical changes of fruits and vegetables under storage and marketing conditions, quality control of fruits and vegetables, climactic effects on the growth of fresh fruits and GMP development for the horticultural industry. He has been a consultant for national associations of horticultural producers. He is currently working on identifying the main pathways of epi- and intra-cuticular components to develop waxes or coatings with appropriate characteristics to modify the ripening process.
